Not only do you have to have high quality knives and plates,but due to wear you may have to add washers to the back of the grinder auger or worm. Its function is to take up the slack from wear on from the auger and the grinder head itself. If your grinder ring will not fit tight on your grinder plate you will wind up with strings coming out of your grinder plate and a lot of sinew on the grinder knife and plate.

PROPER LUBRICATION PREVENTS UNNECESSARY KNIFE AND PLATE WEAR DUE TO OVERHEATING IT IS POSSIBLE FOR A PLATE TO REACH 800 DEGREES F IF ALLOWED TO RUN WITHOUT LUBRICATION HERE ARE SOME PROCEDURES TO PROLONG KNIFE WEAR AND PLATE LIFE.
